I'd like to customize the emails that go out when a task gets assigned to a client workflow status. I want to tell my clients WHAT they need to do in each stage via email.

This feature was added in the winter 25 update.

I want to use the "assigned to client" status as a "homework" reminder for my coaching clients and constant reminder they can login to their portal for assistance.

Also would like to send summary emails for their tasks vs. an email for every single task they are assigned to so they aren't overwhelmed

Yes... and for which company, and who it is assigned to. I have my clients that have multiple companies and the email they receive they wonder, which company is he talking about... is this for me to do, or someone else?

I agree with Grace and we need this as well. I am surprised this functionality doesn't exist!
